Piccalilli is one of our Roots Radicals favorites! This late summer relish is made with sweet corn, cauliflower, cucumbers and onions in a vinegar-mustard sauce with a perfect balance of sweet and sour. The recipe has its origins in India, but has inspired new interpretations across the globe. It is a beautiful example that celebrates how culture and interpretation can be fused to make unique recipes. Our piccalilli is very versatile; eat it on a grilled cheese sandwich, with brunch, with sausages or eggs. It balances perfectly and rich plate and adds the perfect kick to a salad as well.
Roots Radicals is a zero waste, circular economy food company. Our Piccalilli is made with 60% rescued vegetables. By-products were up-cycled into Cauliflower Leaf Kimchi, our Cauliflower Stalk “Escabeche” and corn-cob syrup – to mention a few.
