What is the approach we need to have to our cooking? How can we re-learn that there is value in cauliflower leaves, that after juicing oranges we can still use the skin? That in sprouted garlic or tomato peels there is amazing nutritional potential we have overseen? ⁠

Let's shift our mindset to being more curious, let's ask ourselves how we could we use this ingredient more, is it only for soup or could we also ferment it? What if I make tea with the peels of garlic and some ginger peels? What happens if we dehydrate it and then make a seasoning out of it? Imagine orange skin powder, add some sugar to it and use it to make cake frostings! This is how we come with new and more ways to use more.⁠

The more opportunities and roads for usage for these overlooked ingredients, the more potential we give them to be seen and for them to be used to its full gastronomic potential.

We are so happy, at the same time, to welcome super talented Peruvian architect and design researcher "with a special appetite for food and critical design" Gabriela Aquije @gabriela_a_z as a team member at Roots Radicals. Gabriela will be setting the table every week with different topics to inspire, question, explore, and discover routes to reconnecting back to (good) food.⁠⠀

It has been a year of growth, of slowing down, of going fast, of staying at home, of being empathetic and forgiving, of understanding and solidarity, of love. There has been dark sides showing us light and there has been light showing us new paths. We’ve had to be creative in panic, we’ve had to find opportunities in the unknown and the unstable.

These days are for all of us to be in peace, to take a break, to be with whom we can and show our love to all the ones who are far away, who are vulnerable and to the ones who are struggling with live and living in difficult conditions. And ultimately, always remember to love our Selfs, to be compassionate and to practice some self-care - something we tend to place last on our list, when it should be at the top.

The first time I saw an Apple Pie Filling was in Amish Country in the U.S, where the stores are filled with food preserves from their farms. Pretty amazing. I fell in love with the idea of having the traditional apple pie filling from the farm to the table. Nowadays, we are used to having the frozen version, or perhaps seldom in a Café, but rarely at home anymore.⁠

Many of our Roots Radicals products are made with the idea that you can enjoy cooking at home. We provide you with great products that highlight your cooking experience, we give you 'short-cuts' to flavor, so it takes you less time and effort to achieve an amazing flavorful result, BUT you still enjoy the whole experience of prepping and cooking in a more spontaneous way.⁠

This coming season, it's all about baking pies and sharing with our loved ones! Our apple pie filling fits 1 pie perfectly. You just need to make (or buy) the dough place the filling, place a crumble on top and to the oven for about 45 minutes. It is also delicious to enjoy on its own, with ice cream, pancakes, yoghurt for breakfast. Plus! It is made with 82% rescued apples <3 Doesn't get much better than that!!⁠

Circular Berlin, a non-profit accelerating Berlin's transition towards a circular city, has collected all of these fellow circular-thinkers in their online 'ecosystem'. In this map you can discover Berlin-based organizations and projects working in the circular economy field. You can even search, filter by circular strategies and even contribute to this map. Its a crowdsourced effort! ⁠

Wynona has been with us doing a short internship with us as part of her studies. At first it was challenging because of the long-distance from Berlin to Myanmar in Birmania. Wynona made it easy not to feel any difference. It was a great pleasure to work with a curious young mind, always asking interesting questions and placing a lot of energy and commitment into her work.🙌🏼💥⁠

Can you believe that a few numbers have that big of a impact? 💥 In Germany we have the 'Mindesthaltbarkeitsdatum' otherwise known as 'MHD'. It's a 'best before date', but often confused as a set 'expiry date'. This is purely based on the quality and not safety of the product. In most cases the food will be safe to eat after this date but may not be in it's prime time, perhaps the flavour or texture slightly changes. ⁠
. ⁠
This ambiguous date labeling significantly decrease the odds that food items are fully utilized as many take the 'MHD' as a sign to toss the product in the bin. This leads to a whole lot of food being wasted that was still good enough to be eaten. We highly recommend trusting your instincts and using your senses when it comes to this topic. If its past its 'best before' why not open the product up, inspect it, stir it around if you can and smell it. If nothing seems out of the ordinary do a little taste test. 👀👃🏼👅⁠

@toogoodtogo has a great campaign raising awareness on exactly this topic. They call it 'Oft länger gut' - or 'Often good for longer'. They also reported that almost half of Germans confuse the best-before date (MHD) with the expiry date. 💡 Follow along on their account @toogoodtogo as they are busting tons of myths around food waste and preservation! ⚡ #oftlängergut

On October 21st we were warmly invited by @tiny_farmers to visit their farm, have some hearty soup and harvest green tomatoes. 👩🏼‍🌾🍲 Together with @impacthubberlin and @supercoopberlin this beautiful autumn day was filled with sharing and discussing future collaborations and how we can support each others work.

It's one thing to be in touch with nature and see the love and effort that goes into growing the food that we consume, and its a whole other thing when your values align and you support each other in each others ventures. 💚
.
The @supercoopberlin team even helped us in the kitchen the week after to make some delicious marmalade! We were also able to take some beautiful cauliflower leaves which we use in our Kimchi. 🍃🌶️

This one really hits home for us. As the year is slowly coming to a close, we've be reflecting on the communities that we've been lucky enough to be a part of of and of course the community that we've been building.🙏⁠

This year has shown us more than ever how valuable cultivating collaboration and communities is. We're throwing away the idea of 'competition', of 'the other'. We want to break down these walls that separate us and unite together. 💥 Our idea of community is one that THRIVES off of collaboration, empowering and continuously learning from each other. ⁠
